These French demijohns were used in a fermentation process. The tops were removed when the liquid was poured out. From Wikipedia, "Demijohn presumably comes from the French dame-jeanne, literally "Lady Jane", as a popular appellation; this word is first attested in France in the 17th century. An alternative etymology derives it from the name of a Persian town, Damghan."
All of these demijohns are green glass, though the green hue does vary. Approximate size below. Each Demijohn has now been fitted with a cork, please see the detail photograph of the corked top.
